docs(env): document Stripe env vars in backend/.env.example
STRIPE_SECRET_KEY / STRIPE_PUBLISHABLE_KEY / STRIPE_WEBHOOK_SECRET are required for the self-serve signup flow's checkout, portal, and webhook paths.
